Blow out the candles!
For the first time in four years, I had birthday cake.
Last month, I went to a gluten-free baking class led by Jennifer Cinquepalmi. As a teacher, she was average. As a purveyor of dense,fudgy, lick-your-fingers cakey goodness, she was superb.
Her recipe for Old Fashioned Chocolate Cake was easily the best chocolate cake I've ever had. Rich and chocolately, yet not cloyingly sweet, it had none of the grittiness of most GF baked goods.
So my sister, bless her heart, asked for the recipe. And armed with ingredients she'd never heard of before (Sorghum flour mix? Xanthan gum?), she made my birthday even more memorable. Thanks, sis!
